About the Wine:
Lightly textured, lively front palate. Lovely balance with a heavier emphasis on Chardonnay. Freshly ripened stone fruits, lemon blossom, shortcrust pastry, followed by a beautiful, sustained finish. A generous, friendly, non-pretentious sparkling wine.
Winemaking:
Handpicked in April 2021, each parcel was whole bunch pressed and fermented with natural yeasts in barriques over 2.5 weeks. Racked to older French barrels for 6 months of aging, the winewas blended in late October 2021 - 88% Chardonnay, 12% Pinot Noir. Tiraged in early December 2021, then 24 months on lees, the wine was riddled and disgorged in late December 2023 with zero additions.
